Tenderising Powder For Meat 

Accord is a blend of special phosphates which bind and emulsify comminuted meat. Hence it can retain moisture, flavour and juiciness of the meat protein. When cooked, accord makes the meat emulsion softer with better adhesion and less tendency to render out. Accord is suitable for making sausages, meat balls and meat loaves. The dosage is 0.3% of the meat weight. For example, use only 3 grams for every 1 kg of meat. Spread accord evenly over meat while making emulsion. 

Besides sausages, accord can be used to make fishcakes, squid balls and surimi. The dosage may vary depending on the formulation and process. It's best to run a trial and error experiment before going into full-scale production. 

Store in a cool dry place.
